Summer cooking should be easy and that’s where this salad comes in. It’s everything you love about this time of year (watermelon, strawberries, sunshine) tossed together with cucumber, mint, feta, and just a splash (or more, depending on your taste) of our Strawberry Watermelon wine.
It’s crisp. It’s refreshing. It pairs perfectly with flip-flops and lawn chairs. And yes—it tastes even better with a glass of the wine you just poured into the bowl.
Strawberry Watermelon Cucumber Salad
Ingredients
• 4 cups cubed watermelon
• 3 cups sliced strawberries
• 1 English seedless cucumber, chopped
• 1/4 cup roughly chopped mint leaves
• 1 tablespoon olive oil
• Juice of 1 lime
• 2 teaspoons Hazlitt 1852 Vineyards Strawberry Watermelon wine
• Sea salt, to taste
• 1/2 cup crumbled feta cheese
• Mint leaves for garnish, optional
Directions
In a large bowl, combine the watermelon, strawberries, cucumber, and mint leaves.
In a small bowl, whisk together the olive oil, lime juice, and Strawberry Watermelon wine. Drizzle over the salad and gently stir until salad is coated. Season with sea salt, to taste.
Top with crumbled feta cheese and additional mint leaves, if desired.
